One of China's ten famous teas, Longjing is pan-fired and pressed against the wok, giving it the unique, flat shape it's known for. The heat helps draw out a golden brew with a full, nutty flavor and sweet, buttery finish.
Chinese green tea
Brew 1 tablespoon of tea per 8 oz water at 185o. Infuse for 2-3 minutes. Decant. Green tea left in water too long will become bitter.
