The CO2 method used to decaffeinate the leaf keeps more of the polyphenols and catechins intact. This decaf sencha has a medium body and smooth flavor when brewed at a cooler water temperature between 175 and 185 degrees.
Decaffeinated green tea
Brew 2 teaspoons of tea per 8 oz water at 185o Infuse for 2-3 minutes. Decant. Green tea left in water too long will become bitter.
