A rare find from the Blue Mountains in southern India, frost tea is produced in small quantities during the winter months when temperatures drop. The stress of the cold produces a lovely fruity flavor with low astringency and a long finish.
Indian black tea
Brew 1 teaspoon of tea per 8 oz water at 190o-212o. Infuse for 3-7 minutes. For additional infusions, add fresh hot water and slightly increase steeping time.
